Sweet Potato Soup using the Thermal Pot



Using the Thermal Cooker Pot to cook the sweet potato soup is so easy as well as save gas and electricity.

I only boiled for about 15 minutes on the stove and then keep into the pot to be cooked on its own for about three hours.

Singapore National Day 2020 - Singapore celebrating its 55th birthday

August 9th was the 55th Birthday of Singapore. Due to Covid 19, the event was scaled down and many events were spread in the Heartlands instead of one location for social distancing purposes.


Though the number of covid cases in Singapore is still high but the spread of the virus is only few in the local community. Most cases are in the dormitories of migrant workers. Finally, they have finished all the testing for the workers and the number of cases will go down. Hopefully no cluster again.

 I hope everything will go back to normal so people can lead normal lives, hope the economy will recover and a lot of people will not lose jobs, etc. 

Meanwhile we are still wearing masks indoors or outdoors except in our own homes and remember to sanitise our hands and hope everybody  be healthy.

Kimchi Fried Rice with luncheon meat cooked with the Electric Lunch Box

First time I making Kimchi Fried Rice using the electric lunch box.

Was surprised it turned out to be delicious and tasty. I thought it would end up soggy and sour but I was wrong.

Bought the packet of cut kimchi from supermarket. I used about half the packet and mixed with leftover rice and some luncheon meat. Added some light soya sauce and sesame oil for flavour. Was real good and yummy. Best serve hot when done.

Old Cucumber soup with carrots using the thermal cooker pot




So excited to use my new Thermal Cooker Pot, is slightly bigger than my old thermal cooker pot which means I can add more ingredients to the pot to make delicious soup.

This time I make Old Cucumber Soup with carrots, I did not have to add any seasoning as all the ingredients make the soup very tasty.

Ingredients
300 to 400 gm Pork ribs
300 to 400 gm old cucumber
1 carrot
handful of dried scallops
handful of wolfberries (wash and soak)
few red dates (removed seeds)
dried squid
1200 ml water

Method

1. Wash and scrub old cucumber skin lightly (optional to cut away the skin if preferred)
2. Remove the seeds from the old cucumber and cut the old cucumber into slices
3. Cut the carrots diagonally 
4. Boil and blanch the pork ribs and wash them
5. Add all the ingredients and pork ribs into the thermal pot and add water to cover the ingredients (I added around 1200 ml of water)
6. Boil the soup on medium heat for about twenty minutes.
7. During the last few minutes, add the wolfberries
8. Remove and place the inner thermal pot into the outer thermal pot and covered both lids of the pot and leave them to cook on their own for about three hours.
9. Serve hot

Very useful thermal pot and the best of it, it saves electricity and gas. Monthly bill reduce a lot haha.
