Air Fry Shrimp Cutlet

Make this very easy recipe, using frozen shrimp paste (without thawing), coat with beaten egg and then coat with some breadcrumbs. Air fry at 200 degrees for about 15 minutes or till golden brown. It tasted so good and very crispy.
I dipped with some Macdonald curry sauce and ketchup

Thermal Cooker Pot Recipe - Boiled Chickpeas (Kabool Chana)

Used to buy these snacks from the "kachang puteh" seller, a dying trade, nowadays hard to find them. Was happy my friend taught me how to make this snack. I love eating when I was young.

Didn't know they are also known as chickpeas (Kabool Chana)

Korean Seaweed and Vietnamese Rice Paper Crackers

The seaweed and rice paper crackers tasted just like keropok.

Very easy to make.

Just wet the rice paper with water and stick to the seaweed and dried them under the sun, once they are fully dried, just deep fried them. 

Very tasty and addictive, I mixed some instant noodle seasoning with the crackers.

Preparing for Chinese New Year Snacks - Using the Rotisserie Basket with the Toyomi Air Fryer Oven

Chinese New Year is just round the corner, starting to prepare snacks for Chinese New Year. Although the number of guests will be reduced and some not coming at all. It still need the festive mood to celebrate Chinese New Year whether guests coming or not due to the Covid Pandemic.

I started by roasting some cashew nuts using my new Toyomi Air Fryer and using the Rotisserie Basket for the first time. It was fun watching the basket turning in the oven.

It is so easy and convenient to use the electric lunch box to steam them .

Fried Vietnamese Rice Paper Crackers


I just realised that I can make crackers from Vietnamese Rice Paper.  The crackers cant keep long, only good for couple of days only then it loses its crispiness.

The vietnamese rice paper does not have any taste, can eat together with some salt sprinkle on it or ketchup. I decided to sprinkle some instant noodle seasoning. It tasted good.

Cookies for Chinese New Year

Last weekend, baked some hazelnut cookies for Chinese New Year. It tasted so good. Saw the recipe from the lovely blog of Anncoo Journal.

Baked 2nd batch of my hazel nut cookies, baked them smaller and shaped them nicer with cookie cutters.

Also deep fried some crabsticks, was so easy to made. I bought the DoDo Brand crabstick from NTUC Supermarket. Just tear them in slices and deep fried them till golden brown.

Prawn in Bread Roll

What to do with bread that's near expiry date? I made some prawn rolls with the bread.

I did it in a very simple way, marinated with some curry powder and rolled them in flattened bread and seal them with some egg white.

Banana wrapped in Spring Roll Wrappers/Popiah Skin

This is so yummy and delicious. I saw this recipe in the internet from many bloggers.

Cut the banana into half and add some brown sugar and wrapped them in spring roll wrappers/popiah skin.

The top two are with brown sugar while the other two are without.

The results - it tasted so good whether there is brown sugar or not. YUMMY! The skin is so cripsy and when you bite into it, you tasted the goodness of the banana.

Singapore Muah Chee

This is fantastic about the internet. I found the recipe for muah chee from cookbake legacy.

Elephant Brand Glutinous Rice Flour

Fried Shallot Oil (can be purchased from NTUC supermarket)

Shift the flour

Add water and mix well.

Steamed Muah Chee on tray coated with shallot oil and this is the result of the steamed muah chee

Cut muah chee into bite sizes and roll over the sugar cum nuts.

Yummy. Best when served hot.

DIY BBQ Pork

Ooooo, I found this recipe and make my first Bak Kwa. It tasted as good as those sold outside. But I wondered if it is cheaper to buy than to DIY....lol

After mixing the minced pork with the ingredients, roll it over with a plastic sheet on top so that the pork would not stick to the rolling pin.

Baked them on parchment paper.

Hurray, my Bak Kwa is all ready....hahaha....yummy. Do cut out the black burn ends as they are not healthy.

I need to bake a few times cause my portable oven is too small.

Lastly the worst problem was that my youngest son gobble all the bak kwa before I can finish the 3rd tray. So I had to lock my kitchen door to prevent him from attacking the final tray (lol). But he is smart to climb through the bar counter beside the kitchen door by opening the window above the counter....Help!!!!

Note: Bakkwa, or rougan is a Chinese salty-sweet dried meat product similar to jerky, made in the form of flat thin sheets. It is normally made from pork.
