Kimchi Fried Rice with luncheon meat cooked with the Electric Lunch Box

First time I making Kimchi Fried Rice using the electric lunch box.

Was surprised it turned out to be delicious and tasty. I thought it would end up soggy and sour but I was wrong.

Bought the packet of cut kimchi from supermarket. I used about half the packet and mixed with leftover rice and some luncheon meat. Added some light soya sauce and sesame oil for flavour. Was real good and yummy. Best serve hot when done.

Old Cucumber soup with carrots using the thermal cooker pot




So excited to use my new Thermal Cooker Pot, is slightly bigger than my old thermal cooker pot which means I can add more ingredients to the pot to make delicious soup.

This time I make Old Cucumber Soup with carrots, I did not have to add any seasoning as all the ingredients make the soup very tasty.

Ingredients
300 to 400 gm Pork ribs
300 to 400 gm old cucumber
1 carrot
handful of dried scallops
handful of wolfberries (wash and soak)
few red dates (removed seeds)
dried squid
1200 ml water

Method

1. Wash and scrub old cucumber skin lightly (optional to cut away the skin if preferred)
2. Remove the seeds from the old cucumber and cut the old cucumber into slices
3. Cut the carrots diagonally 
4. Boil and blanch the pork ribs and wash them
5. Add all the ingredients and pork ribs into the thermal pot and add water to cover the ingredients (I added around 1200 ml of water)
6. Boil the soup on medium heat for about twenty minutes.
7. During the last few minutes, add the wolfberries
8. Remove and place the inner thermal pot into the outer thermal pot and covered both lids of the pot and leave them to cook on their own for about three hours.
9. Serve hot

Very useful thermal pot and the best of it, it saves electricity and gas. Monthly bill reduce a lot haha.

Unboxing my new 3.5 litres La Gourmet Thermal Cooker Pot

There's a promotion at NTUC Supermarket for La Gourmet Cookwares. Need to spend at least $30 to get one point and need 4 to 8 points to purchase the cookwares at cheaper prices.

As I need a bigger thermal cooker pot, this comes handy and moreover I can use my linkpoint to offet the purchase price somemore. 

I used 8 points to purchase the 3.5 litres thermal cooker pot and offset with my linkpoint, I only paid about $36 after offsetting. Great bargain.

Soya Sauce Chicken with Taro Rice using the Tefal Rice Cooker

Today for lunch, I made soya sauce chicken rice  ad taro rice using the Tefal Rice Cooker.

Very easy to make except lots of preparation and washing hahaha.

Ingredients

Soya Sauce Chicken

Half Chicken
few slices ginger
few cloves of garlic
Star anise, cinnamon, cloves for fragrance to the sauce
2 and half tablespoon sugar
300 ml water
1/4 cup dark soya sauce 

Taro Rice

2 cups Jasmine rice
handful of dried shrimps (soak and wash)
1 rice bowl of taro (cut into cubes)

Method

1. Marinate the chicken with 1/4 cup of dark soya sauce
2. Place the chicken into the rice cooker with all the dark soya sauce
3. Add all the ingredients into the rice cooker.
4. Cook the chicken in the rice cooker with the default rice cooking button (45 mins cooking time)
5. When chicken is done, transfer to dish
6. Use the rice cooker to cook the Taro Rice
7. Wash the rice and add the soya sauce instead of water to the rice.
8. 2 cups rice plus 2 cups soya sauce gravy (for softer rice, 1 cup rice plus 1.2 cup soya sauce gravy)
9. Add the dried shrimps and taro into the rice and cook using the default rice cooking button (cooking time 45 mins)
